doughnut muffin recipe


I have had lots of people ask me for this recipe, so I thought I would share. Enjoy


Doughnut muffins

I use the mini muffin pan. It’s like eating doughnut holes!

For the muffins:

1 ½ cups unsalted butter, warmed to room temperature

1-3/4 cups sugar

4 large eggs

6 cups all-purpose flour

1 Tbs. plus 2 tsp. baking powder

1/2 tsp. baking soda

1-3/4 tsp. salt

1 tsp. ground cinnamon

1-2/3 cups milk

1/4 cup buttermilk

For dipping:

1 cup unsalted butter; more as needed

2 cups sugar

2 Tbs. ground cinnamon

To make the muffins
Put a rack in the middle of the oven and heat the oven to 350°F. In a stand mixer or a large bowl, cream the butter and sugar. Beat in the eggs, one at a time, until just mixed in. Sift together the flour, baking powder, baking soda, salt, and cinnamon. Combine the milk and buttermilk. With a wooden spoon, mix a quarter of the dry ingredients into the butter mixture. Then mix in a third of the milk mixture. Continue mixing in the remaining dry and wet ingredients alternately, ending with the dry. Mix until well combined and smooth, but don't overmix. Grease and flour a standard-size muffin tin. Scoop enough batter into each tin so that the top of the batter is even with the rim of the cup, about 1/2 cup. (A #16 ice-cream scoop gives you the perfect amount.) Bake the muffins until firm to the touch, 30 to 35 min.

To finish
Melt the butter for the dipping mixture. Combine the sugar and cinnamon. When the muffins are just cool enough to handle, remove them from the tin, dip them into or brush them all over with the melted butter, and then roll them in the cinnamon sugar.

Hunter made a 100!



Hunter made a 100 on his ABC's of Bell County project. We are very proud of him. Even if we did most of the work! lol I love you Hunter Neill :)

I am so proud of Atyana. She did really well and did everything her teacher told here to do. The teacher told Kyle and I she was very smart and she thinks she will do just fine. When we left she told her Daddy now you have to buy me a piano!

Where does the time go? I have been so busy and have not had time to blog :( Last week I worked three day at Snickelbritches and on Friday night Atyana and Hunter went to stay the night with their Nina (aka Nana), and Kyle and I got to go to dinner and a movie. We got to have some very much needed adult time ;) Then on Sunday we took a little trip to Round Rock to eat at Mighty Fine and check out Ikea with the Morris family. The guys did not have so much fun at Ikea but us girls found a few small things that we could not live without.

Happy Late Halloween






















We had so much fun on Halloween. We missed Hunter because he had to visit with his Dad but he came home with a ton of candy. Atyana and her BFF Madi were Gabriella and Sharpay from High School musical. They were so cute. And they are for sure both very DIVA! They both rode in the wagon most of the night and just wanted to be pulled up to the doors. Here are a few pics .....and we are still eating Halloween candy and I have even sent two bags with Kyle to work!

Finally done with Hunter's ABC's school project! It almost got the best of me! lol Each letter had to have something that was geographic or historical that started with the letter, and he had to interview someone who has lived in Bell County for a minimum of 20 years. Hunter interviewed Mama and Pawpaw Reichert. Thanks Mama! The last two days we drove around Bell County taking pics. Here are a few and a couple of Atyana riding in the car. Enjoy

The Beginning


I love sharing things that are going on with us, and sometimes I forget the funny things that happen everyday. I thought that this would be a great way for our family and friends to keep up with us!....and you know Atyana is always up for a good photo shoot.
